- 1 lb chicken breast, cubed
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup spinach, chopped
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onions, diced carrots, and diced celery. Sauté for about 5-7 minutes, until they start to soften.
- Stir in the minced garlic and cook for an additional minute, until fragrant.
- Add the cubed chicken and cook until it’s no longer pink, about 5 minutes.
- Pour in the chicken broth and bring to a boil.
- Reduce the heat and stir in the heavy cream and chopped spinach.
- Season with Italian seasoning, salt, and pepper to your liking.
- Let the soup simmer for 10-15 minutes until everything is heated through and flavors meld together.
- Serve warm with crusty bread for dipping.
