A hearty and comforting soup to use up leftover turkey or rotisserie chicken, packed with nutrients from fresh vegetables.
Ingredients

- 2 cups leftover turkey or rotisserie chicken, shredded
- 1 onion, diced
- 2 celery stalks, diced
- 2 carrots, diced
- 2 bay leaves
- ¼ cup fresh parsley, chopped
- 6 cups chicken broth
- Salt, to taste
- Pepper, to taste
Instructions
- In a large pot, sauté diced onions, celery, and carrots until softened.
- Add the leftover turkey or rotisserie chicken, bay leaves, and chicken broth.
- Season with salt and pepper to taste.
- Bring to a boil, then reduce heat and let simmer for 20-30 minutes.
- Add chopped parsley before serving.
Notes
Feel free to add other vegetables like potatoes or green beans, or use different herbs for added flavor. The soup can also be made in a slow cooker on low for 6-8 hours.
