- 1.5 lbs chicken breasts
- 1.5 lbs baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 1 cup chicken broth
- 4 cloves garlic, minced
- 1 cup grated parmesan cheese
- Fresh parsley for garnish (optional)
Instructions
- Wash and halve the baby potatoes.
- Rub the chicken breasts with olive oil, Italian seasoning, salt, black pepper, and red pepper flakes until evenly coated.
- Place the halved potatoes in the bottom of the crockpot and lay the seasoned chicken breasts on top.
- Pour the chicken broth over the chicken and potatoes.
- Evenly distribute the minced garlic and grated parmesan cheese over the chicken.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken reaches 165°F and potatoes are tender.
- Carefully remove the chicken and potatoes from the crockpot and serve, spooning any remaining sauce over the top.
- Garnish with chopped parsley if desired before serving.
Notes
You can customize this dish by adding carrots or green beans for more nutrition. Consider serving with a squeeze of lemon juice for extra flavor.
