Ingredients

- 8 ounces spaghetti
- 2 tablespoons good quality olive oil
- 2 cloves garlic, finely minced
- ¼ teaspoon red pepper flakes (adjust according to your spice level)
- 1 (14.5 ounce) can diced tomatoes, undrained
- ¼ cup fresh basil, roughly chopped
- Salt and freshly ground black pepper, to taste
- 2 tablespoons grated Parmesan cheese, for serving
Instructions
- Bring a pot of salted water to a boil and cook the spaghetti according to package directions until al dente. Reserve ½ cup of pasta water before draining.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about a minute.
- Pour in the can of diced tomatoes (undrained) and bring to a gentle simmer for 5-7 minutes.
- Add the fresh basil and season with salt and pepper to taste.
- Combine the drained spaghetti with the sauce. Add reserved pasta water gradually for desired consistency.
- Serve immediately with a sprinkle of Parmesan cheese on top.
Notes
Try adding veggies like spinach or zucchini for added nutrition. Optionally, use gluten-free pasta if needed.
