Ingredients

- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 bell pepper, chopped
- 1 cup mushrooms, sliced
- 2 cups spinach
- 1 can (15 oz) garlicky tomato sauce
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for drizzling
- 1 cup shredded cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large baking dish, layer the fresh veggies starting with zucchini, followed by yellow squash, bell pepper, mushrooms, and spinach.
- Pour the garlicky tomato sauce evenly over the veggies.
- Sprinkle Italian seasoning, salt, and pepper over the dish.
- Drizzle a bit of olive oil on top.
- Add shredded cheese on top if desired.
- Cover the dish with foil and bake for 25-30 minutes.
- Remove the foil and continue baking for another 10-15 minutes until the vegetables are tender.
- Let it cool for a few minutes before serving.
Notes
Feel free to swap any vegetables for those you have on hand or add protein like quinoa or chickpeas for a heartier dish.
