A quick, delicious meal perfect for any weeknight dinner featuring fresh zucchini, ground turkey, and marinara sauce.

- 4 medium fresh zucchini
- 1/2 yellow onion, diced
- 1 pound lean ground turkey
- 1 1/2 cups quality marinara sauce
- 2–3 tablespoons freshly grated Parmesan cheese (optional)
Instructions
- Preheat the oven to 400°F.
- Heat a large non-stick pan over medium-high heat. Add diced onion and ground turkey, seasoning with salt and pepper. Cook for 8-10 minutes.
- Pour in the marinara sauce and stir to coat, simmer for 2-3 minutes.
- Slice the zucchini lengthwise. Scoop out seeds, leaving a quarter-inch wall.
- Arrange zucchini boats in a baking dish. Fill with the turkey mixture and sprinkle with optional Parmesan.
- Cover with foil and bake for 20-30 minutes or until zucchini is tender. Remove foil in the last few minutes to melt the cheese.
- Serve hot and enjoy!
Notes
You can prepare the turkey filling a day in advance. Stuff the zucchini just before baking. Leftovers can be stored for up to 3 days.
