A comforting and flavorful pasta dish made with fresh tomatoes, garlic, and butter, perfect for busy weeknights.
Ingredients

- 8 oz pasta of your choice
- 4 tbsp butter
- 3 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 1/2 tsp red pepper flakes
- Salt to taste
- Black pepper to taste
- 1/4 cup fresh basil, chopped
- 1/4 cup Parmesan cheese, grated
- Zest of 1 lemon
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
- Melt the butter in a large skillet over medium heat.
- Add minced garlic and sauté for about a minute until fragrant, then add halved cherry tomatoes.
- Sauté tomatoes for 5-7 minutes until soft and releasing juices, stirring occasionally.
- Season the mixture with red pepper flakes, salt, and black pepper, then stir to combine.
- Add drained pasta to the skillet and toss to coat in the sauce.
- Slowly add reserved pasta water to adjust sauce consistency as needed.
- Remove from heat and stir in basil, Parmesan cheese, and lemon zest until combined.
- Serve warm, garnished with extra Parmesan cheese and fresh basil.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, add a splash of olive oil or reserved pasta water if necessary.
