- 10 mini bell peppers (red, yellow, and orange)
- 8 oz cream cheese (softened)
- 1 cup shredded cheddar cheese
- 1 cup cooked ground turkey (or your choice of meat)
- 1 tsp garlic powder
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
- Wash the mini bell peppers. Slice them in half lengthwise and remove the seeds.
- In a bowl, combine softened cream cheese, shredded cheddar, ground turkey, and garlic powder. Stir until well mixed.
- Generously fill each pepper half with the cheese and turkey mixture.
- Place the stuffed peppers in the baking dish and bake for 20-25 minutes, until tender and golden brown.
- Allow to cool slightly before serving. Garnish with fresh herbs if desired.
Notes
These peppers can be prepped a day in advance. They store well in the fridge and can be reheated easily.
