- 2 cups cooked white rice
- 1 pound chicken breast, diced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1/4 cup green onions, sliced
- Sesame seeds for garnish
Instructions
- In a skillet, heat 1 tablespoon of sesame oil over medium heat until it shimmers.
- Add the minced garlic and ginger; sauté for about 30 seconds until fragrant.
- Add the diced chicken breast to the skillet and cook for 5-7 minutes, or until browned and cooked through (internal temperature should reach 165°F).
- In a bowl, mix soy sauce, honey, and rice vinegar. Pour this sauce over the chicken and simmer it for another 2-3 minutes, or until thickened.
- Serve the chicken over the cooked rice, garnished with sliced green onions and sesame seeds.
Notes
For extra flavor, consider adding steamed vegetables or a light salad on the side. Leftovers can be stored in the fridge for up to 3 days.
