- 8 ounces farfalle pasta
- 2 tablespoons olive oil
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 cup Parmesan cheese (or nutritional yeast for a dairy-free option)
- Salt and pepper to taste
Instructions
- Cook the farfalle pasta according to the package instructions. Once al dente, drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sliced mushrooms to the skillet, sautéing until the mushrooms are tender, about 5 minutes.
- Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
- Combine the cooked farfalle with the sautéed veggies in the skillet.
- Stir in the Parmesan cheese until well mixed.
- Season with salt and pepper to taste and serve warm.
Notes
For a heartier meal, add cooked chicken or white beans. Store leftovers in an airtight container in the fridge for about 3 days.
