Sorrento-style Pasta is a comforting dish combining pasta with a rich tomato and mozzarella sauce, perfect for busy weeknights.

- 8 oz penne or rigatoni pasta
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (28 oz) whole tomatoes
- Salt and pepper, to taste
- 8 oz mozzarella cheese, diced
- Fresh basil, torn
- Grated Parmesan cheese (optional, for baking)
Instructions
- Boil a large pot of salted water and cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
- Add minced garlic and cook for 1 minute, being careful not to let it burn.
- Pour in the canned tomatoes, season with salt and pepper, and cook for 15-20 minutes until the sauce thickens.
- Mix in the cooked pasta, ensuring all pieces are coated with the sauce.
- Stir in the diced mozzarella, allowing it to melt slightly.
- Add torn basil leaves and adjust seasoning as needed.
- (Optional) Transfer to a baking dish, sprinkle with grated Parmesan, and bake in a preheated oven at 180°C (350°F) for 15-20 minutes until bubbly and golden.
- Serve warm, garnished with additional basil and a drizzle of olive oil, if desired.
Notes
For a meatier dish, add shredded rotisserie chicken or turkey bacon. You can also substitute mozzarella with feta or non-dairy cheese for variations.
