- 8 ounces penne pasta
- 1 tablespoon olive oil
- 1 pound smoked sausage (turkey or chicken sausage recommended)
- 1 bell pepper, chopped
- 1 can (14 ounces) diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat and add the sliced smoked sausage. Cook until browned.
- Add the chopped bell pepper and cook for 3-4 minutes until tender.
- Stir in the diced tomatoes and Italian seasoning, and let simmer for 5 minutes.
- Add the cooked penne to the skillet and toss to combine. Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil if desired.
Notes
This dish can be made with other pasta shapes or vegetables if preferred. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
