Ingredients

- 1 pound sausage (Italian or your choice; for a lighter option, try turkey sausage or chicken sausage)
- 1 cup lentils (rinsed and drained)
- 1 onion (chopped)
- 2 carrots (diced)
- 2 celery stalks (diced)
- 3 cloves garlic (minced)
- 6 cups vegetable or chicken broth
- 1 can diced tomatoes (14.5 oz)
- 1 teaspoon dried thyme
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- In a slow cooker, add the sausage, lentils, onion, carrots, celery, and garlic.
- Pour in the broth and add the diced tomatoes, thyme, cumin, salt, and pepper.
- Stir well to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until lentils are tender.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
