- 4 chicken breasts
- 2 cups chicken broth (or vegetable broth for a lighter option)
- 1 lemon (juiced and zested)
- 2 cloves garlic (minced)
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- 1 tablespoon fresh rosemary (or 1 teaspoon dried)
- Salt and pepper to taste
- 2 cups long-grain white rice
- 4 cups water
- Chopped parsley for garnish
Instructions
- Place the chicken breasts inside your slow cooker.
- Pour in the chicken broth, then add the lemon juice and zest, minced garlic, thyme, rosemary, and sprinkle with salt and pepper.
- Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and cooked through.
- About 30 minutes before serving, cook the rice according to the package instructions, using water.
- Once the chicken is done, shred it in the slow cooker using two forks, mixing it with the sauce.
- Serve the lemon herb chicken over the rice and garnish with chopped parsley.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. You can freeze chicken separately for up to 3 months.
