Ingredients

- 1 lb ground beef (or substitute with ground turkey or chicken)
- 3 cups potatoes, diced
- 1 can (15 oz) beans (like kidney or black beans), drained and rinsed
- 1 can (10.5 oz) diced tomatoes with green chilies
- 1 cup corn (canned or frozen)
- 1 onion, chopped
- 2 cups cheese (cheddar or your choice), shredded
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef over medium heat. Drain any excess fat.
- In your slow cooker, start layering: half of the diced potatoes, ground beef, beans, corn, tomatoes, and seasonings.
- Add the remaining potatoes on top and sprinkle cheese over everything.
- Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
- Serve hot and enjoy!

Consider adding bell peppers or zucchini for extra veggies, and try different types of cheese for a unique flavor.
