- 1 cup fresh or frozen cranberries
- 1/2 cup balsamic vinegar
- 1 cup beef broth
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (like thyme or rosemary) for garnish
Instructions
- Preheat your oven to 300°F (150°C).
- Season the chuck roast generously with salt and pepper.
- In a large oven-safe pot, heat olive oil over medium-high heat. Sear the chuck roast on all sides until browned.
- Remove the roast from the pot and set it aside. Add the chopped onion and garlic to the pot, cooking until softened (about 3-4 minutes).
- Stir in the cranberries, balsamic vinegar, and beef broth, mixing gently.
- Return the seared roast to the pot, cover, and place it in the preheated oven.
- Braise for 3-4 hours or until the meat is fork-tender.
- Serve garnished with fresh herbs.
Notes
Browning the meat enhances flavor; add honey or maple syrup for a sweeter glaze if desired.
