- 1 lb ground beef
- 1 cup chopped onions
- 2 cloves garlic, minced
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups cooked pasta or rice
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef with onions and garlic until fully cooked. Drain excess fat.
- Add mixed vegetables, diced tomatoes, beef broth, soy sauce, thyme, salt, and pepper to the skillet. Simmer for 10 minutes.
- Stir in the cooked pasta or rice until well combined.
- Transfer the mixture to a casserole dish and top with shredded cheddar cheese.
- Bake in the preheated oven for 20-25 minutes or until cheese is melted and bubbly.
- Serve hot and enjoy.
Notes
This casserole is great on its own, but can be served with a green salad or garlic bread. For added crunch, consider sprinkling breadcrumbs on top before baking.
