Description
Soft, chewy chocolate chip cookie bars baked in one pan. No chilling, ready in about 35 minutes — perfect for holidays, bake sales, or weeknights.
Ingredients
Scale
- 1/2 cup (113 g) unsalted butter, melted
- 3/4 cup (150 g) brown sugar, packed
- 1/4 cup (50 g) granulated sugar
- 1 large egg + 1 egg yolk
- 1 1/2 tsp vanilla extract
- 1 1/4 cups (160 g) all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup (170 g) semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang.
- In a bowl, whisk melted butter with brown sugar and granulated sugar until smooth. Whisk in egg, egg yolk, and vanilla.
- Stir in flour, baking soda, and salt until just combined; fold in chocolate chips. Spread in pan. Bake 22–25 minutes, or until top is golden and center is just set. Cool, then slice into bars.
Notes
Tested twice; best texture when the center is just barely set. For dairy-free, use vegan butter and dairy-free chips. For gluten-free, use a 1:1 baking blend and add 1 Tbsp milk if the dough is dry.
