Ingredients

- 1 pound pasta (penne or ziti)
- 2 cups fresh tomatoes or canned crushed tomatoes
- 2 cups mozzarella cheese, cubed
- 1 cup grated Parmesan cheese
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
Instructions
- Chop fresh tomatoes or prepare canned crushed tomatoes and cube mozzarella cheese.
- Cook pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and set aside.
- Heat olive oil in a skillet over medium heat, add minced garlic and sauté for 1 minute.
- Add chopped or crushed tomatoes, season with salt and pepper, and simmer for 10-15 minutes until the sauce thickens.
- Add cooked pasta to the sauce and mix well.
- Fold in cubed mozzarella and half of the grated Parmesan cheese.
- Pour pasta mixture into a baking dish and spread evenly.
- Top with remaining Parmesan cheese and extra mozzarella, if desired.
- Preheat oven to 350°F (180°C) and bake for 15 minutes until cheese is bubbly and golden.
- Garnish with fresh basil leaves before serving.
Notes
For added flavor, consider adding veggies like spinach or bell peppers to the sauce or a pinch of red pepper flakes for some heat.
