  • 1 sweet onion, diced
  • 4 garlic cloves, minced
  • Kosher salt and black pepper, to taste
  • 1 tablespoon tomato paste
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1 (14 oz) can fire-roasted tomatoes
  • 2 (14 oz) cans cannellini beans, drained and rinsed (about 28 oz total)
  • 4 cups vegetable or chicken stock
  • 1 Parmesan rind
  • 1 cup heavy cream
  • 1/2 cup finely grated Parmesan cheese, plus more for topping
  • 5 oz fresh spinach (or frozen, thawed and squeezed dry)
  • Crushed red pepper, for topping (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic along with a pinch of salt and black pepper. Sauté for about 5 minutes until they soften.
  2. Stir in the tomato paste, dried basil, oregano, and thyme. Cook for 3 to 5 minutes, stirring often, until the paste darkens and the spices become fragrant.
  3. Add the fire-roasted tomatoes, cannellini beans, stock, and the Parmesan rind. Bring the mixture to a boil, then reduce it to a gentle simmer. Cover and cook for 20 minutes, stirring occasionally.
  4. After 20 minutes, uncover the pot and remove the Parmesan rind. Stir in the heavy cream, grated Parmesan, and spinach. Simmer for an additional 5 to 10 minutes, until the cheese melts and the spinach wilts.
  5. Taste the soup and adjust the salt and pepper as needed. Ladle the soup into bowls and top with extra Parmesan and a pinch of crushed red pepper if desired.

Notes

Make sure to rinse the cannellini beans well. For a vegan option, use plant-based cream and vegetable stock. This soup can be customized with different vegetables and proteins.
