- 4 cloves garlic, minced
- 1 teaspoon crushed red pepper flakes
- 1 pound chicken breast, cubed
- 1 cup chicken broth
- 9 ounces cheese tortellini
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the minced garlic and crushed red pepper flakes; sauté for about 1 minute until fragrant.
- Toss in the cubed chicken, seasoning with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
- Pour in the chicken broth and bring to a gentle simmer.
- Stir in the tortellini and cook according to package instructions, about 3-5 minutes, until al dente.
- Remove from heat and stir in the Parmesan cheese until melted.
- Garnish with fresh parsley before serving.
Notes
For added nutrition, feel free to include fresh or frozen vegetables. You can also use leftover rotisserie chicken.
