- 1 pound ground turkey or lean beef (or plant-based substitute)
- 1/2 cup onion, diced
- 1 teaspoon garlic, minced
- 2 cups low-sodium chicken or vegetable broth
- 1 (24-ounce) jar marinara sauce
- 8 ounces uncooked spaghetti noodles (or gluten-free pasta)
- 8 ounces cream cheese (or dairy-free alternative)
- 1 cup cottage cheese (or dairy-free cottage cheese)
- 1/4 cup sour cream (or Greek yogurt or vegan yogurt alternative)
Instructions
- In a large skillet with deep sides, brown and crumble the ground turkey or beef with the diced onion over medium-high heat for 5-7 minutes until crumbly.
- Add the minced garlic and cook for 1 minute until fragrant.
- Add the broth, marinara sauce, and uncooked spaghetti noodles. Stir and bring to a boil, stirring frequently.
- Once boiling, reduce heat to medium-low and let simmer for about 10-12 minutes, stirring occasionally.
- Remove from heat and stir in cream cheese, cottage cheese, and sour cream. Adjust consistency with extra broth or water if needed.
- Serve warm and enjoy!
Notes
Great with fresh herbs on top, served with salad or garlic bread. Leftovers last up to 4 days in the fridge or 2 months in the freezer.
