A hearty and comforting beef stew perfect for celebrating Mother’s Day with family.
Ingredients

- 2 lbs beef chuck, cut into chunks
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine (optional, or substitute with extra broth or grape juice)
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- 2 bay leaves
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a Dutch oven over medium heat.
- Add beef chunks and brown them on all sides, then remove and set aside.
- In the same pot, add chopped onions and minced garlic. Sauté until soft and fragrant.
- Stir in the tomato paste and cook for another minute.
- Return the beef to the pot and add beef broth, optional red wine, sliced carrots, diced potatoes, thyme, bay leaves, salt, and pepper.
- Bring to a boil, then reduce the heat to low and let it simmer for 120-180 minutes until the beef is tender.
- Adjust seasoning if needed, and serve hot.
Notes
Serve in warm bowls with crusty bread, salad, or steamed vegetables. Leftovers can be stored in the fridge for 3-4 days or frozen.
