A delightful blend of tender turkey meatballs, fresh cucumbers, and creamy tzatziki, perfect for a quick weeknight dinner.

- 1 pound ground turkey
- ½ cup Italian breadcrumbs or blanched almond flour
- ¾ cup yellow onion, chopped
- 1 large egg
- 2 teaspoons garlic, minced
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- Chopped cucumbers
- Kalamata olives
- Tzatziki sauce
- Fresh dill
- Lemon wedges or slices
- Cooked rice or pearl couscous
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground turkey, breadcrumbs (or almond flour), chopped onion, egg, minced garlic, salt, and pepper.
- Mix until fully incorporated. If the mixture looks crumbly, add 1 tablespoon of water to help bind it.
- Roll the mixture into 2-inch balls (about 2 tablespoons each) to form approximately 16 meatballs.
- Place the meatballs on a baking sheet lined with parchment paper and bake for 15 minutes.
- For a crispy exterior, turn the broiler to high for the last 2-3 minutes of baking.
- Once done, assemble your bowls with your favorite cooked grain, cucumber, tzatziki sauce, olives, dill, and a drizzle of fresh lemon juice on top.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. You can prep meatballs ahead and freeze uncooked, baking from frozen.
