This lemon herb chicken is juicy, tender, and bursting with bright summer flavor. It’s a go-to weeknight dinner that feels fancy but cooks in just 25 minutes.

- 4 boneless, skinless chicken breasts (about 1½ lb / 680 g)
- 3 tbsp olive oil (45 mL)
- 2 tbsp fresh lemon juice (30 mL)
- 1 tbsp lemon zest
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- In a bowl, whisk olive oil, lemon juice, zest, garlic, oregano, thyme, salt, and pepper. Add chicken and coat well. Marinate 30 minutes (or up to 2 hours in fridge).
- Heat a skillet over medium-high heat. Add chicken; cook 5–6 minutes per side until golden brown and internal temp reaches 165°F (74°C).
- Remove from heat, rest 5 minutes. Sprinkle fresh parsley and extra lemon zest before serving.
Notes
Pound chicken to even thickness for faster cooking. Use chicken thighs for extra juiciness. Grill for smoky flavor (4–5 min per side). Add cherry tomatoes or zucchini to make it one-pan. Marinate overnight for bolder taste. Serve with a squeeze of lemon right before eating.
