- 1 lb ground beef or pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp pepper
- 1 large onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes
- 4 cups chicken or beef broth
- 1 tsp dried oregano
- 1 bay leaf
- Fresh basil for garnish
Instructions
- In a bowl, combine ground meat, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix well and form into meatballs.
- In a large pot, heat a little oil over medium heat. Add diced onions, carrots, and celery, and cook until softened.
- Add the diced tomatoes and broth to the pot. Bring to a simmer.
- Add the meatballs to the soup along with oregano and bay leaf. Cook for 20-30 minutes until the meatballs are cooked through.
- Remove the bay leaf and serve hot, garnished with fresh basil.
Notes
For a leaner option, use ground turkey instead of beef or pork. You can also add more vegetables for extra nutrition.
