- 1 (12-14 lbs) turkey (thawed)
- 1 onion, quartered
- 1 head garlic + 4 to 5 cloves, smashed
- 2 sprigs rosemary
- 2 sprigs sage
- 2 tablespoons butter, softened
- Salt and pepper, to taste
- Optional: poultry spice, for added flavor
Instructions
- Preheat your oven to 325°F. Make sure your oven rack is in the lower position.
- Prep the turkey: Rinse the turkey inside and out under cold water, and pat dry with paper towels.
- Season the cavity: Stuff the turkey’s cavity with the quartered onion, smashed garlic cloves, and sprigs of rosemary and sage.
- Butter and season: Rub the softened butter all over the turkey. Season generously with salt, pepper, and optional poultry spice for extra flavor.
- Place in the oven: Put the turkey breast side up on a roasting rack in a large roasting pan.
- Roast: Cook for approximately 13-15 minutes per pound. For a 14 lbs turkey, this will take about 3 to 3.5 hours.
- Check doneness: Use a meat thermometer to check the thickest part of the thigh, which should read 165°F.
- Rest before carving: Let the turkey rest for at least 20-30 minutes before carving.
Notes
Always let your turkey sit out for about 30 minutes before cooking for even cooking. Baste the turkey every hour with its own juices for extra moisture and crispy skin.
