Description
Crispy Brussels sprouts with a sweet-tangy honey Dijon glaze, perfectly caramelized in the air fryer for an easy weeknight side.

- 1 ½ lbs Brussels sprouts (680 g), trimmed and halved (quarter extra-large)
- 2 tbsp olive oil (30 ml)
- ¾ tsp kosher salt, plus more to taste
- ½ tsp black pepper
- 1 tbsp lemon juice (15 ml)
- 2 tbsp honey (30 ml)
- 1 ½ tbsp Dijon mustard (22 ml)
- 1 small garlic clove, finely grated or minced
- ¼ tsp red pepper flakes (optional, for heat)
- 1 tsp lemon zest (optional, bright finish)
Instructions
- Trim stem ends, remove ragged outer leaves, and halve (quarter larger ones). Pat very dry.
- In a large bowl, toss sprouts with olive oil, salt, and pepper until glossy.
- Add to air fryer basket in a mostly single layer. Cook at 380°F (193°C) for 8 minutes, then shake or stir.
- Whisk honey, Dijon, lemon juice, garlic, and red pepper flakes. Pour half into a small bowl for finishing.
- Toss hot sprouts with remaining glaze, return to air fryer 2–5 minutes more until charred and caramelized.
- Toss with reserved glaze and lemon zest; season to taste.
Notes
For vegan, swap honey with maple syrup. All ingredients are naturally gluten-free. Dry sprouts well for maximum crispiness. Don’t overcrowd the basket for even cooking. For extra-crispy edges, bump to 400°F for the last minute.
