Healthy Vegan Carrot Ginger Soup

Description

A warm and nutritious vegan soup made with carrots and ginger, perfect for winter.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of fresh ginger, grated
  • 6 large carrots, peeled and chopped
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)
  • Lemon juice for added zest (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and sauté until it becomes soft, about 5 minutes.
  3. Stir in the garlic and grated ginger, cooking for another minute until fragrant.
  4. Add the chopped carrots and vegetable broth to the pot. Bring to a boil, then reduce heat and let it simmer for about 20 minutes, or until the carrots are tender.
  5. Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, you can transfer the soup to a regular blender in batches.
  6. Return the soup to the pot. Season with salt and pepper, and add a squeeze of lemon juice if desired.
  7. Heat through and serve hot.

Notes

For creaminess, add coconut milk; for spice, add cayenne pepper or red pepper flakes. Customize by adding sweet potatoes or bell peppers.
