- 1 lb chicken breast, diced
- 1 cup orange juice
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon cornstarch
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
- Orange slices for garnish
Instructions
- In a bowl, mix together the orange juice, soy sauce, honey, cornstarch, garlic, ginger, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Add the diced chicken to the skillet and cook until browned on all sides, about 5-7 minutes.
- Pour the sauce over the chicken and cook until the chicken is fully cooked and the sauce thickens, about another 5-10 minutes.
- Garnish with chopped green onions and orange slices before serving.
Notes
Serve over steamed rice or quinoa for a complete meal. Can add sautéed vegetables for extra nutrition. Leftovers can be stored in an airtight container for up to 3 days.
