- 1 lb (450 g) ground turkey
- 2 medium sweet potatoes (peeled and diced)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 red bell pepper (diced)
- 1 cup spinach (fresh or frozen, thawed)
- 1 cup low-sodium chicken broth
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 tsp chili powder
- Salt and pepper (to taste)
- 1/2 cup shredded cheese (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for 2-3 minutes until fragrant.
- Add the ground turkey to the skillet. Cook until browned, about 5-7 minutes. Season it with smoked paprika, cumin, chili powder, salt, and pepper.
- Stir in the diced red bell pepper and spinach. Cook for another 2-3 minutes until the veggies are slightly tender.
- In a separate pot, boil the diced sweet potatoes until tender, about 10 minutes. Drain well.
- In a baking dish, layer the cooked sweet potatoes and the turkey mixture. Pour the chicken broth evenly over the top.
- Top with shredded cheese if using. Bake in the preheated oven for 15-20 minutes until hot and bubbly.
- Let it cool slightly before serving. Enjoy this nutritious meal!
