A quick and easy Ground Turkey Stir-Fry with Cabbage and Peppers, ready in just 30 minutes, perfect for busy weeknights.
Ingredients

- 1 pound ground turkey
- 4 cups shredded cabbage
- 1 bell pepper, sliced (any color)
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Optional: red pepper flakes for heat
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add 2 cloves of minced garlic and 1 teaspoon of minced ginger. Sauté for about 1 minute, until fragrant.
- Add 1 pound of ground turkey to the skillet. Season with salt, pepper, and red pepper flakes if desired. Cook for about 5-7 minutes until browned.
- Stir in 1 sliced bell pepper and 4 cups of shredded cabbage. Cook for another 2-3 minutes until the veggies start to soften.
- Pour in 1 tablespoon of soy sauce, mixing well. Cook for an additional 5-7 minutes, or until the cabbage is tender.
- Serve warm, perfect for low-carb bowls or meal prep.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. This dish also freezes well.
