- 4 bell peppers
- 1 pound ground turkey
- 1 cup cooked quinoa
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 ounces)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Cheese (optional, for topping)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet over medium heat, cook the ground turkey, diced onion, and minced garlic until the turkey is browned and the onions are translucent (about 5-7 minutes).
- Stir in the cooked quinoa, diced tomatoes (with their juice), chili powder, cumin, salt, and pepper. Mix well and let cook for an additional 3-5 minutes.
- Fill each bell pepper with the turkey and quinoa mixture, packing it in gently.
- Place the stuffed peppers upright in a baking dish.
- If using cheese, sprinkle it on top of each pepper.
- Bake for 25-30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Serve and enjoy your healthy meal prep!
