Delightful skewers combining fresh mozzarella, cherry tomatoes, and basil, perfect for summer barbecues or as a refreshing appetizer.
Ingredients

- 1 pint cherry tomatoes (about 20)
- 8 oz fresh mozzarella balls (bocconcini)
- 1 bunch fresh basil leaves
- 2 tablespoons olive oil
- Salt and pepper to taste
- Balsamic glaze (optional)
- 10–12 wooden or metal skewers
Instructions
- Start by rinsing the cherry tomatoes and basil leaves under cold water. Pat dry with a paper towel.
- On each skewer, alternate threading a cherry tomato, a basil leaf, and a mozzarella ball. Repeat until ingredients are used up, leaving some space at the ends.
- Place the skewers on a large plate and drizzle olive oil over them. Sprinkle with salt and pepper to taste.
- Heat your outdoor or indoor grill to medium-high heat (around 400°F).
- Once preheated, place the skewers on the grill. Cook for 2-3 minutes on each side until the tomatoes blister and the cheese starts to melt.
- Remove from the grill and drizzle with balsamic glaze if desired. Enjoy warm!
Notes
If your mozzarella balls are large, consider cutting them in half to prevent uneven cooking.
