- 1 pound chicken breast, diced
- 1 package (16 oz) gnocchi
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Parmesan cheese, grated (for serving)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and sprinkle it with a bit of salt and pepper. Cook until it’s browned and fully cooked, about 5-7 minutes.
- Remove the chicken from the skillet and keep it warm. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Add the gnocchi and chicken broth to the skillet. Bring the mixture to a simmer and follow package instructions, cooking the gnocchi for about 2-3 minutes until they float.
- Stir in the heavy cream and return the cooked chicken to the skillet. Cook for an additional 2-3 minutes until the sauce thickens slightly.
- Serve hot, garnished with chopped parsley and a sprinkle of grated Parmesan cheese.
Notes
Feel free to add vegetables like spinach or cherry tomatoes for extra nutrition. If you want a lighter version, substitute half the heavy cream with low-fat milk.
