Description

A comforting and delicious one-skillet chicken casserole with apples and onions, perfect for busy weeknight dinners.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs (about 2 lbs total)
  • 2 tbsp unsalted butter
  • 1 large yellow onion, thinly sliced (about 1 1/2 cups)
  • 2 medium Granny Smith apples, peeled and sliced
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 1/2 cup chicken broth (or vegetable broth)
  • 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
  • Salt and freshly ground black pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken thighs dry and season them generously with salt and pepper.
  3. Heat a 12-inch oven-safe skillet over medium heat and melt the butter until it foams but does not brown.
  4. Place the chicken thighs skin-side down in the skillet, without crowding the pan. Cook for about 4-5 minutes until golden and caramelized. Flip the chicken and brown the other side for about 3 minutes. Transfer the chicken to a plate.
  5. Add the sliced onions and apples to the same skillet. Cook gently, stirring occasionally, for about 5 minutes until softened.
  6. Pour in the chicken broth, scraping up the browned bits from the bottom of the pan.
  7. Nestle the browned chicken thighs back into the skillet, skin-side up, among the apple and onion mixture.
  8. Slowly pour the heavy cream over everything and sprinkle with fresh thyme.
  9. Place the skillet in the preheated oven and bake for about 30-35 minutes until the cream is bubbling and the chicken skin is golden, with an internal temperature of 165°F (74°C).
  10. Let the casserole rest for 5 minutes before serving.

Notes

Let the chicken rest before slicing to help keep it juicy. This dish can also be made ahead up to the baking step and stored in the fridge.
