  • 3/4 cup (90 g) powdered sugar, plus more for dusting
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • 2 cups (240 g) all-purpose flour
  • 1 cup (96 g) almond flour
  • 1/4 teaspoon salt
  • 3/4 cup (240 g) raspberry jam (seedless preferred)

Instructions

  1. Make the dough: In a large bowl, beat the softened butter and powdered sugar until light and fluffy. Add the egg yolk and vanilla and mix until combined. Add the all-purpose flour, almond flour, and salt; mix just until a soft dough forms. Divide the dough into 2 discs, wrap, and chill for 1 hour.
  2. Cut and bake: Preheat the oven to 350°F (175°C). On a lightly floured surface, roll one disc at a time to about 1/8 inch (3 mm) thick. Cut out cookies with a round or fluted cutter; cut centers from half of the cookies to make tops. Transfer to parchment-lined baking sheets. Bake 10–12 minutes, or until the edges are just turning golden. Cool completely on wire racks.
  3. Fill and dust: Spread a small amount of raspberry jam on the flat side of each bottom cookie. Top with a cutout cookie and press gently to sandwich. Dust generously with powdered sugar. Let set for 30 minutes before packaging.

• Dairy-free: use plant-based butter sticks. • Gluten-free: use a 1:1 GF flour blend with xanthan gum. • Fill just before serving if storing longer than 3–4 days. • Freeze unfilled cookies up to 2 months; thaw, then fill.
