A warm and comforting pumpkin soup that’s quick to make and full of flavor.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) pumpkin puree
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
- 1 cup heavy cream or coconut milk (optional)
- Pumpkin seeds for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute.
- Add the pumpkin puree, vegetable broth, cumin, and cinnamon. Stir well to combine.
- Bring to a boil, then reduce heat and let simmer for 15-20 minutes.
- If using, stir in the heavy cream or coconut milk and heat through.
- Season with salt and pepper to taste.
- Serve hot, garnished with pumpkin seeds if desired.
Notes
For extra flavor, you can add a pinch of nutmeg or a splash of apple cider vinegar for acidity.
