Description
Chewy, one-bowl oatmeal cookies that bake in 20 minutes—perfect for quick holiday trays. Tested twice; best texture at 10 minutes.
Ingredients
- 1 cup (226 g) unsalted butter, softened
- 1 cup (200 g) packed light brown sugar
- 1/3 cup (65 g) granulated sugar
- 1 large egg
- 2 tsp vanilla extract (or alcohol-free vanilla)
- 2 cups (200 g) old-fashioned rolled oats
- 1 1/4 cups (160 g) all-purpose flour
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/2 tsp fine salt
- 3/4 cup (120 g) raisins or dairy-free chocolate chips
- Optional: 2–3 tbsp holiday sprinkles
Instructions
- Cream butter and sugars until fluffy; beat in egg and vanilla.
- Stir in oats, flour, cinnamon, baking soda, and salt until just combined; fold in add-ins.
- Scoop 1 1/2 tbsp mounds onto a lined sheet. Bake at 350°F (175°C) for 9–11 minutes; cool 5 minutes on pan.
Notes
Dairy-free: use plant butter or 3/4 cup (150 g) refined coconut oil (+1 tbsp flour). Gluten-free: use 1:1 GF baking blend and certified GF oats. Alcohol-free: use vanilla powder or alcohol-free vanilla. Small-batch: halve the recipe. Storage: airtight 3–4 days; freeze up to 3 months. Reheat at 300°F (150°C) for 3–5 minutes.
