Description
A warm and comforting soup made with leftover turkey, perfect for busy weeknights.
Ingredients

- 2 cups cooked turkey, shredded
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup frozen peas
- 1 cup corn (optional)
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onions, carrots, and celery. Sauté until softened, about 5 minutes.
- Stir in the garlic and cook for another minute.
- Add the shredded turkey, chicken broth, thyme, rosemary, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
- Add the frozen peas and corn (if using) and cook for another 5 minutes.
- Adjust seasoning if needed and serve warm.
Notes
For added flavor, use homemade turkey stock if available. You can also stir in spinach or kale in the last few minutes of cooking.
