- 3 cups all-purpose flour (360 g)
- 1 teaspoon baking soda (5 g)
- 1 teaspoon fine salt (6 g)
- 1 teaspoon sugar, optional (4 g)
- 1¼ cups cultured buttermilk (300 ml), plus 1–2 tablespoons if needed
- 1 tablespoon neutral oil (15 ml), optional
- Optional: 1 tablespoon chopped fresh rosemary (3 g); ½ teaspoon garlic powder (1.5 g)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment. Whisk flour, baking soda, salt, and sugar. Add buttermilk and oil; stir just until a shaggy dough forms.
- Lightly flour the counter. Pat dough into a 7-inch (18 cm) round, 1½ inches thick. Transfer to sheet; slash a deep “X” about ½ inch (1.25 cm) into the top.
- Bake 25–28 minutes until deep golden and 200–205°F (93–96°C) inside. Cool 10 minutes, then slice.
Notes
Dairy-free: Use 1¼ cups oat or almond milk + 1 Tbsp lemon juice; rest 5 min. Gluten-free: Use 1:1 GF all-purpose + ½ tsp xanthan if needed; add 1–2 Tbsp extra liquid if dry. Tested twice; best texture at 26–28 minutes bake.
