Elegant and comforting, Duchess Potatoes are creamy with crispy edges, perfect alongside any main dish.

- 2 pounds Russet or Yukon gold potatoes
- 1/4 cup unsalted butter, divided
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese (or nutritional yeast for vegan)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 large egg yolks (or flax eggs for vegan)
- Fresh chopped chives or parsley, for garnish
- 1 tablespoon sea salt, for garnish
Instructions
- Peel and chop the potatoes into chunks and cover with cold water in a large pot. Add a pinch of salt, bring to a boil, and cook for 15-20 minutes until fork-tender.
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Melt half of the butter in a microwave-safe bowl and warm the cream in another bowl until cozy.
- Drain the potatoes and return them to the pot on low heat to evaporate moisture. Mash until smooth.
- Stir in two tablespoons of melted butter, warm cream, Parmesan, salt, pepper, and egg yolks until creamy.
- Pipe small mounds onto the baking sheet with a star tip, spacing an inch apart.
- Brush with remaining melted butter and bake for 15-20 minutes until golden brown and crispy.
- Garnish with chives or parsley and serve immediately.
Notes
Make-ahead by preparing the mashed mixture a day in advance. You can also customize flavors with garlic powder or smoked paprika.
