A warm and delightful turkey chili that brings everyone together, perfect for busy weeknights or dinner parties.
Ingredients

- 1 pound of lean ground turkey (or substitute with ground chicken or beef)
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 oz) of diced tomatoes, with juices
- 1 can (15 oz) of black beans, rinsed and drained (or use kidney beans)
- 1 cup of corn (fresh, frozen, or canned)
- 1 tablespoon of chili powder (or smoked paprika for a different twist)
- 1 teaspoon of cumin
- Salt and pepper to taste
- 2 cups of vegetable or chicken stock (can substitute with water plus a splash of apple cider vinegar)
Instructions
- In a large pot, heat a bit of oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes until they soften.
- Stir in the minced garlic, cooking for another minute until fragrant.
- Add the ground turkey, cooking until browned and fully cooked, about 6-8 minutes.
- Stir in the diced tomatoes, black beans, corn, chili powder, cumin, and stock. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low. Let it simmer for 15-20 minutes, allowing the flavors to meld together.
- Taste it again. Adjust seasoning if necessary.
Notes
Feel free to let it simmer longer if you have time; more time can only enhance the flavors!
