Ingredients

- 2 lbs chicken breasts
- 1 cup peanut butter
- 1/2 cup soy sauce
- 1/2 cup coconut milk
- 1/4 cup honey
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Place the chicken breasts in your slow cooker.
- In a separate bowl, mix together the peanut butter, soy sauce, coconut milk, honey, lime juice, garlic, ginger, and red pepper flakes, if using.
- Pour the peanut sauce over the chicken in the slow cooker.
- Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
- Shred the chicken in the slow cooker and stir to coat it in the sauce.
- Add salt and pepper to taste and serve hot, garnished with chopped cilantro.
Notes
Leftovers can be stored in the fridge for 3-4 days or frozen for later use. Reheat gently and add a splash of coconut milk if it thickens too much.
