Ingredients
- Fresh tortellini
- Tomato cream sauce (store-bought or homemade)
- Fresh spinach
- Garlic
- Olive oil
- Salt
- Pepper
- Parmesan cheese (optional)
Instructions
- Bring a large pot of water to a boil, and cook the tortellini according to package instructions (about 3-5 minutes).
- Heat a splash of olive oil in a skillet over medium heat, then add minced garlic and sauté for about a minute until fragrant.
- Add fresh spinach and stir until it wilts, about a couple of minutes.
- Pour in the tomato cream sauce, stirring until the spinach is fully combined with the sauce.
- Season with a pinch of salt and pepper to taste.
- Drain the tortellini and gently add it to the skillet, tossing everything together for another minute or two to heat through.
- Serve warm, topped with grated Parmesan cheese if desired.
Notes
For extra protein, consider adding grilled chicken, shrimp, or chickpeas. You can also substitute spinach with kale or broccoli for variations.
