Ingredients

- 2 cups cherry tomatoes
- 4 cloves garlic
- 1 cup ricotta cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Pasta of choice
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Place the cherry tomatoes and garlic cloves on a baking sheet. Drizzle with olive oil and season with salt and pepper.
- Roast in the oven for about 20 minutes, or until the tomatoes are soft and the garlic is fragrant.
- Once roasted, combine the tomatoes, garlic, and ricotta cheese in a blender or food processor. Blend until smooth and creamy.
- While the sauce is blending, cook your pasta according to the package instructions.
- Toss the cooked pasta with the creamy sauce until it’s nicely coated.
- Serve warm, garnished with fresh basil.
Notes
This sauce can be frozen for quick meals later. Add chili flakes for some heat or sautéed spinach for extra greens.
