- 1 onion
- 2 cloves garlic
- 4 cups chicken broth (or vegetable broth)

- 1 cup grated Parmesan cheese (or nutritional yeast for vegan option)
- 2 cups spinach or kale (optional)
- Salt to taste
- Pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat.
- Add chopped onion and minced garlic, sauté until softened and translucent.
- Remove casing from the Italian sausage, breaking it apart in the pot, and cook until browned.
- Pour in chicken broth and bring to a gentle boil.
- Add Ditalini pasta and cook according to package instructions until al dente (about 7-9 minutes).
- Stir in heavy cream and grated Parmesan cheese until well combined.
- If using, toss in spinach or kale and cook until wilted.
- Season with salt and pepper to taste.
