- 400 g rigatoni
- 300 g Italian sausage (mild or spicy), or turkey/chicken sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
- 200 ml heavy cream
- 100 g grated parmesan
- 2 tablespoons olive oil
- 1 teaspoon Italian herbs
- Salt and pepper, to taste
- Fresh basil, for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Reserve about a cup of pasta water, then drain and set aside.
- In a big skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spatula as it cooks.
- Once the sausage is browned, add the diced onion and cook until soft, about 3-4 minutes. Stir in the minced garlic and Italian herbs, cooking for another minute until fragrant.
- Pour in the heavy cream and cook for 2-3 minutes, stirring to combine. If it feels too thick, add a bit of the reserved pasta water until you reach your desired creaminess.
- Add the cooked rigatoni to the skillet, tossing everything together. Stir in the grated parmesan and season with salt and pepper to taste.
- Transfer the creamy rigatoni to plates. Garnish with fresh basil if desired, and enjoy!

Leftovers can be stored in an airtight container in the fridge for up to three days.
