Ingredients

  • 1 pound chicken breast
  • 8 ounces pasta (penne or rotini)
  • 1 cup chicken broth (or vegetable broth)
  • 1 cup heavy cream (or milk/dairy-free substitute)
  • 1 cup grated Parmesan cheese (or nutritional yeast for a vegan option)
  • 1 cup mixed vegetables (like peas and carrots)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: parsley for garnish

Instructions

  1. Place the chicken breast in your crockpot and season it with salt and pepper.
  2. Add the diced onion, minced garlic, and mixed vegetables on top of the chicken.
  3. Pour in the chicken broth and heavy cream, covering everything nicely.
  4. Cover your crockpot and cook on low for 6-7 hours, or until the chicken is fully cooked through.
  5. Shred the chicken directly in the crockpot and stir in the cooked pasta and Parmesan cheese until combined.
  6. Serve warm, garnished with parsley if desired.

Notes

Cook pasta separately while the chicken is cooking to prevent it from getting too soft. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
