Ingredients

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped green onions for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onions and garlic, sauté until softened.
- Add diced potatoes and Cajun seasoning, stirring for 2 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and let simmer for 15-20 minutes, or until potatoes are tender.
- Use an immersion blender to blend the soup until creamy (or blend in batches).
- Stir in heavy cream, seasoning with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
Adjust the level of spice by adding more or less Cajun seasoning. For a healthier option, use coconut milk in place of heavy cream.
